Javier Cussato graduated from Le Cordon Bleu Institute in 2009 with an Associate Degree in Science & Arts. After graduation, he traveled to Peru to stage in the kitchens of Acurio International’s restaurants in Peru and Lima Peruvian restaurant kitchens. When Cussato returned to the US in 2010 he was an opening team member of La Mar by Gastón Acurio overlooking the Biscayne Bay and the Miami skyline and located in the Mandarin Oriental Miami, which became one of the most popular Peruvian restaurants from the acclaimed chef, writer, and promoter of his homeland’s cuisine.
During this period with the international restaurant group, he sharpened his hospitality management and culinary skills before moving to San Francisco in 2017. He worked alongside Executive Chef Victoriano Lopez at La Mar Cebicheria Peruana, assisting with the leadership of the culinary team and participating directly in the creation of new dishes. In December 2020, he transitioned into the role of Executive Chef for Jaranita spearheading the launch of the first Peruvian rotisserie restaurant from Acurio.
